Brachetto d'Acqui - Denominazione d'origine controllata e garantita - 2008

GRAPE: 100% Brachetto.
EXPOSURE: West, South-West.
Altitude: 300m above sea level.
Cultivation method: low Guyot with 5.000 vines per hectare.
Soil: average with a tendency towards lime.
YEAR PLANTED: 1996.
Climate: Mediterranean with a slightly continental trend especially in the winter and a habitually Southerly wind known as the "Marin" from spring to autumn which cools the hottest days.
Harvest: by hand into small baskets.
Date of harvest: 12th and 13th September 2008.
Average grape-yeld per hectare: 5,50 tons.
Vinification: All grapes undero submerged cap fermentation on the skins for 4 days with controlled temperature (2°-3° C). After a soft press, the wine is transferred into autoclave at 18° C for approximately 10 days till "presa di spuma". When the alcohol level 5% vol. is reached, the fermentation is stopped with the lowering of the temperature (-3° C). After a filtering, the wine is ready to be bottled.
Bottling date: More bottlings during the year...
Refining in bottle: one month.
